What types of counter-tops can you cut on without causing damage (and can clean easily)?

    Polished concrete, or ceramic tile would be less damaged than other materials--but NO countertop material is cut-proof completely.  And some are harder to clean than others. Cutting boards are very CHEAP--countertops are NOT. Buy a cutting board and forget what materials can be cut on.

    I’ve got solid wood work tops and just kept the off cuts and cut outs to make chopping boards . You can cut in granite but it is slippery , so I’d get a wooden chopping board anyway.

    We have granite countertops but we do not use them as cutting surfaces because that dulls the knife edges in a very short time. You should always use a cutting board or better yet a good plastic cutting board.

    Stainless steel or stone, maybe quartz, but it's going to be hard on your knife. There's a reason cutting boards are used. Countertops and good knives are expensive. Cutting boards are cheap.

    The professionals use stainless steel, but they spare their knives by using a plastic or wooden cutting board.

    If they are hard enough not to be damaged then you will damage your knives. So use a cutting board.
