Why do greek love stories end tragically? ?

Did many humans hate the goddess aphrodite? or was it simply fate?

You need to be a little more specific.  Galatea and Pygmalion has a happy ending since Aphrodite took pity on Pygmalion.  Many of the stories, such as Helen of Troy, about Aphrodite serve as a warning about the excesses of passion.  Aphrodite also punished those who turned their backs on love. Aphrodite represents all forms of love.  She had her followers and festivals.  The element copper, cuprum is named after her as is the island of Cyprus.
