Do you hate the taste of gelatine?

Whenever I make Jell-O from scratch, I use fresh lemons from my tree (they are MEYER lemons ok), meaning that I can't use much lemon juice, or the Jello-O will be really sour XD. This means that when I water down the lemon juice, I can really taste the gelatine, and it makes me feel sick to my stomach. I'm not allergic to gelatine, it's unflavored, and no one else in my family seems to care. WHY? Do you hate the taste of gelatine too?

It doesn't taste of anything, it gives a texture which I don't think can be successfully mimicked by plant or chemical alternatives, even though they go some way towards it, it's not quite the same. I think your dislike of it is psychological, it is a bit yuck if you think about it but so are many foods, so it's best not to think and just eat it.

Look up Jell-O instant gelatin mix.  They come in little boxes in a variety of flavors.  My 2 favorites are the strawberry and lime.  I get them at Safeway.  Other stores have them, too.  They're 😋

    Gelatin has no flavor alone

For your lemon gelatin try this

Dissolve the sugar you are going to use with the lemon juice AND the zest of the lemons.  There is more lemon flavor in the zest than there is in the lemon juice.  If you still think there is not enough flavor use a bit of lemon extract. The extract (at least the one that I have is real lemon) It is concentrated so add just a 1/4 tsp to see how it is.

If you do not want the zest in the final gelatin then strain the liquid before putting it into your mold or bowl, whatever you are going to serve it in.

If it is the texture that you are not liking, rather than the flavor try adding just a little bit more liquid if it is firmer than you want.

Your photo is of Unflavored gelatin-which means it has no taste.

I can honestly say that I never knew you could make your own home made 'jello'. Mind officially blown.

Add sugar to counteract the lemons' sourness and don't dilute the juice.

Nobody cares about what kind of lemons you use.

If you can taste the gelatin in lemon jello, you're doing something wrong with your recipe.

FFS...if you don't like it, don't eat it.    It has ZERO nutrition.   It literally doesn't count as food.

As far as why you don't like it...why does anyone not like something?
