if I go in my backyard and shoot a hornet's nest with my bb gun could they find me

They can't see in the dark, but they may have other ways to find you.  Scent for example.  I don't recommend a bb gun for getting rid of hornets; there are better ways, and yes, they should be carried out in the dark.
