How did people celebrate Christmas in 1880?

    The same as now with gifts and family visits.

    People would go to church.  Those  living in the city probably went to the butcher shop a few weeks before Christmas and ordered a ham or turkey or goose for dinner.  Sometimes relatives from out of town would visit.  Probably many gifts were handmade.  Maybe they would string popcorn and put it on the Christmas tree.  We did that when I was a kid.  Dear old dad or an older son would have to cut down the tree if they lived in a low-populated area.
