Why have Earth formed as a disk, while other planets as spheres?

    Earth is no different than the other planets--all are approximately spherical (Jupiter is furthest from being a perfect sphere).  Their gravity pulls them into that shape.  This is true for anything more than about 250 miles/400 kilometers diameter.  The largest Solar System object not roughly spherical is Saturn's moon Hyperion, and it's no disk either.
