Why don’t singing waiters ever say the name of the restaurant customer’s birthday?

They do in some places if they know it. but sometimes when they spontaneously gather waiters most or all do not know the name.

They probably just have the 'one song fits all' repertoire.

Perhaps because it's simpler for them to have one generic song, especially at busy restaurants. And at the restaurants I've been to, it doesn't seem there is much preparation involved - just whichever staff are available will go to the table and participate in the song. (So it's a straightforward process this way.)
Also, on occasions - there may be a practical joker at the table, who tells the waiter a different or embarrassing name, which could be additional work for the staff to double check whether it is or isn't appropriate to sing it.

Most likely for safety. If it's an attractive girl, it may unsafe.
