Beignet I accidentally added two cups of simmered milk( substitute for evaporated milk) to recipe. ?

Now what is the batter still good or should I start over?

    If the amount of evaporated milk was supposed to be 2 cups the 2 cups of milk you added should be fine. Your batter with the milk will be a bit less rich than if you had made it with evaporated milk. 

    You must be making a lot, 2 cups of liquid in a dough like that is going to make quite a few.
