    First, sushi is about the rice. All the other ingredients are like icing on a cake. Although difficult for most non-Japanese to distinguish, the cooked rice from each sushi eateries are different in flavor - at least they are suppose to be. In fact, a sushi chef trainee begins his apprenticeship by cooking the rice.

    The fish and other seafoods are not plain everyday raw seafood - at least not anymore if it is legit.  With a handful of exceptions, all seafood used in raw form for sushi are flash frozen which is a process which freezes the seafood food below -300F within minutes.  This kills parasites and more important the cyst (eggs) they lay in the host. And even more important is that some fish have more germs than others. For example around 98% of Saba (mackerel) have parasites of some kind. But they are safe to eat because of flash freezing.

    Not all seafoods used in sushi are raw. For example, Anago/Unagi are always cooked eels - and if you've ever seen an eel you would understand why even the Japanese don't eat it raw. Ebi (shrimp) and Shako (Mantis Shrimp) are cooked. And some toppings are not even seafood, such as tamago - Japanese style egg omeltte,

    FWIW, Sushi is not made with fish.  It's EEL.

    Its sliced very thin, sometimes served raw, sometimes its dressed in lemon juice or a rice wine vinegar.

    Sushi is actually the rice. (sushi means sour rice) 

    the "garnish" is fish, egg or anything else that is placed on the rice. 

    Sushi rice is a short grain rice and after it is cooked sugar and vinegar are added to it. 

    Typically the fish that is placed on top is a thin slice of a high quality fish.  

    Also a bit of wasabi is added to the underside of the fish. 

    Sushi is a finger food, no chopsticks are "required"
