I have had luck using non-stick pans or flat non-stick pan, the key is to find something with very low sides. The cast iron holds the heat so much better. I never quite mastered the art of spreading the batter with the back of the dipper so I lift the pan up and twirl it so the batter lays out in a nice circle and thins out appropriately.
