Can a dusk to dawn light fixture be configured so the dusk to dawn feature does not work. ?
The light would only come on when the light switch is flipped
If you don't want a light on at night - then do NOT even buy a light.

This would depend on the particular model light that you have. Some have a switch to change to different modes. If yours does not offer this feature you could just cover the sensor with some duct tape so it will always sense that it is dark.

Yes, rewire the light and bypass the sensor

Yes you just have to bypass the sensor. there 2 wires that go into the sensor. After you killed the breaker then test with your multimeter. you cut those 2 wires then splice them the light switch will control it.

Oh, and if anyone can answer my questions too, it would be great! Really! .....
Can a dimmer switch be configured so the dimmer feature does not work? You know, the light would only come on when the light switch is flipped. Yes.
And what about my electric can-opener? Can it be configured so the powered mechanism does not work? You know, it would only open tins when I turned the handle manually.

Put tape over the light sensor.

Why not just cover the sensor and the light will always come on because it thinks it dark.

Yes. The dusk to dawn gizmo is a switch. Wire around the switch. In the fixture, wire direct to the light with the incoming switch wire.
