Do you say a formal “hi” to all colleagues? What if they walk past & dont say hi? After opinions and want to see what others do?

You either continue to say hello or you stop.  No obligation to keep up communication if you feel it is only one way.

Some people are just wired differently. I wouldn't take offense to it. Just say hi to people and be polite. Maybe they will follow suit, maybe not. At least you are being the polite one.
