Atheists, why can't you prove that God doesn't exist?

IMO, atheists don't have to prove that God does not exist.
(Asking for proof of non-existence tends to just start a philosophical argument anyway.)
What they DO need to do is show that something else can be a rational and coherent basis of existence just to make their worldview tenable.
- the "poof" theory that temporal existence came from nothing and by nothing
- the "it has always been there" theory.
Neither of which are scientifically or philosophically logical.
Atheists often decry that theists believe without thought and reason.
Ironic since there are no ontological reasons to form a basis for atheism from - none.
(And many know it. Which is why the "atheism is just lack of belief in God" response grew in popularity starting some 20 or so years ago.)

For the same reason Christians can not prove that Brahma doesn't exist, for the same reason Muslims can not prove that Waheguru doesn't exist, For the same reason Judaism can not prove that Ahura Mazda doesn't exist
... religions are a jumble of false assertions, with no basis in reality and the very idea of gods is a product of the human imagination... that theist can't prove any of those deities exist

The same reason why no one can prove that he DOES exist. Arguing back and forth over something that can't be resolved is a complete and utter waste of time.

Since you can't prove that God exists there's no need prove he doesn't exist.
