You have to remember that they had few ways to preserve food.   One way was beer and wine.   Brew them up,  store them in an air tight container and they have a decent shelf life.    If you let bacteria get to the wine it turns into vinegar,  which was a drink the Romans seemed to like.   Beer then was probably much like beer today except each batch was probably a little big different as they had little quality control.

    Probably like modern lambics.

Wine is made from fermented fruits or other plants that are not grains. Beer is made from fermented grain with added flavorings.  I'm sure beer from thousands of years ago was nothing like commercial beers of the last 150 or so years.
