What sauce would go well with Fried Cauliflower, Mushroom and Salmon?

A light lemon dill sauce.
Cook it this way and you don't need sauce.
Get a piece of aluminum foil large enough to wrap the salmon in. If you have a large piece of fish, cut it in two.
Lightly butter the foil or use nonstick spray.
Lay lemon slices on the foil, enough to touch the majority of the fish. Sprinkle dill on the lemon and salt and pepper. Place the fish skin side down on the lemon. Salt and pepper the fish and cover with dill and lemon. Place chopped garlic and onion on top. Rosemary can be substituted for or used with dill. Add a few slices of butter or drizzle with olive oil.
Close the foil and bake at 375 for 15 minutes. Place the packets on a cookie sheet to catch any drips
You can grill the packets too.

Maybe a nice cream sauce, not too thick, and possibly with a bit of dill in it as all three of these foods can take on the flavor of dill.

Why not make a Mushroom sauce to have with the Salmon and Cauliflower.

None. Stirfry them in butter, red onion and chopped garlic. Until it's almost burnt.
🥴 With salmon. Just bake it in A LOT of mayo and onions. You're gonna love it. I recommend eating it with sweet baked plantain bananas.
