Why do people like a burnt crust on their steak?

I like mine evenly cooked.

    There are lots of way to cook a steak,  its just personal preference.

    You sear it to hold juices in.  I've tried a sous vide and didn't care for it.

    Burned steak is burned steak. Yuck.
