What do people mean by ‘Hold the Mayo’?

It’s one of those things I’ve heard numerous times over the years that I’ve kinda just shrugged my shoulders at 🤷‍♂️ because it seems unimportant....  but I give in, what the hell does it mean?

Hold the mayo, or mustard or whatever... why do you have to hold the mayo? I don’t get it

People usually put mayonaisse on sandwiches, and when someone says hold the mayo it means they're requesting that mayonaisse is not put on their sandwich.
