I cooked some salmon and accidentally left it on the counter for about 3 hours after taking it out of the pan. ?
How long before it goes bad after leaving it out?

It should still be OK, it has not had enough time for bacteria to increase to harmful levels.

Cooked meat (including poultry and fish) is a lot less likely to be unwholesome than raw meat. People used to pack cooked chicken to eat on a journey lasting 4 days and that cooked chicken was just fine to eat for 4 days even without refrigeration. (This was just chicken, not something like chicken salad where ingredients like mayonnaise tend to spoil without refrigeration.)
Cooked meat isn't going to spoil from being at room temperature for a few hours.
Excepting botulism, food spoilage is generally obvious. It doesn't just look a little odd and have a bit of aroma. When food has become downright dangerous, it looks god awful and the smell would gag a maggot.
You might get a little gassy from eating something no longer at its freshest, but it's not going to do you any serious harm. Being overly eager to discard food is wasteful.

It is fine -- some meals take a couple hours to finish.

When the temperature drops to between 70 and 42 degrees-that is when bacteria will start to develop/
