How many years of aging does a spirit need to have to be considered middle shelf and also to be considered top shelf?

There are too many variables to give  you a cogent answer. Vodka doesn't much improve with age, but Scotch and Bourbon come to life over time. Tequila takes a few years. The prior use of the aging barrel is also a variable.

It varies. Call a liquor store and ask them these questions. Most will know.
