Why are countries like Greece and Italy and Mongolia that produced such powerful empires so irrelevant today?

I'm not sure exactly what you mean by "irrelevant." No county is really irrelevant, though obviously some are more well-known or prominent than others on the world stage. Essentially, time flies like an arrow, and over the course of human civilisation there have been a great many nations and empires that have risen to greatness from Egypt and Macedon to Portugal. As time went on, other nations and peoples grew to become more powerful, and it's been a natural cycle of great powers being born and having their time in the sun before being replaced by new ones. Greece and Italy and Mongolia may not be the military powers that they once were, and while they don't wield the same cultural influence that they did centuries ago, their legacy hasn't been forgotten. It's not only possible, but very likely that in several hundred years' time, when people hear about how the United States and China, Russia and the United Kingdom were once the most powerful countries in the world that they'll wonder how such relatively inconsequential countries managed to attain that level of greatness.

You have it the wrong way round darling, the empires produced the countries not the other way round.

    Greece – 1832

    Italy – 1871

    Mongolia – 1921

History is cyclical. Egypt and Rome are former superpowers, for example.

It's inevitable that the USA will one day be irrelevant. I hope I live to see it.

Empires wax and wane.  The UK, the Netherlands, the "Holy Roman Empire", Byzantium, Spain, and France had empires and were top powers in their days.

Study them.  There are reasons why they declined.  The financial burden of holding an empire together, the difficulty of keeping in touch with all parts, the wars for supremacy, the wars for independence (aka rebellions and revolts. You can't please some or all of your subjects all the time), epidemics cutting the sources of soldiers and farmers, the grandiose lifestyles of some elites.  You can add other reasons.

Just as Covid is raising havoc in America, so did the plagues of ancient times raise havoc with the Roman and Ottoman Empires, with Greece, Italy, and Mongolia.
