When in the Navy we had to produce our own drinking water (potable water) when the ship was at sea.  ---  Collecting FRESH water from the saltwater of the ocean was called desalination. This was a big deal because we purified about 100 gallons per person per day for a 6000 man crew.  ---  We wanted fresh water NOT salt.

Collection of salt from the water is done by evaporating the water and the salt is left behind.

So collecting salt I would say is done by evaporation.

    from WIKIPEDIA

Desalination is a process that takes away mineral components from saline water. More generally, desalination refers to the removal of salts and minerals from a target substance,[1] as in soil desalination, which is an issue for agriculture.[2]

Saltwater is desalinated to produce water suitable for human consumption or irrigation. The by-product of the desalination process is brine.[3] Desalination is used on many seagoing ships and submarines. Most of the modern interest in desalination is focused on cost-effective provision of fresh water for human use.

    Overall it is desalination.

    There are two methods ;-

    1. Evaporation in salt pans &

    2. By Osmosis, that is passing the salt water through a membrane.

It is not desalination because that is the reverse process - removal of salts from water to make pure water . Read your reference and you will see that desalination is a process that takes away mineral components from saline water.

In our case the saline water is exposed to the (warm) atmosphere while the water evaporates leaving a mixture of mineral salts behind.

Yes the salts do eventually crystallise but that is not the process .. expelling the water is  .... your answer is water loss or evaporation.
