How would you cook a hanger steak to bring out the full flavour?

    Preheat an oven to 400 degrees F. Rub steaks on each side with olive oil. In a small bowl, stir together salt, white pepper, and black pepper. Rub onto both sides of steak. Get an oven safe skillet heating over high heat. Add in 2 tablespoons of the butter and let melt. Add in steaks and sear 2 to 3 minutes each side.

    I would start with a marinade to season and tenderize the meat.  Then a screaming hot cast iron skillet with canola oil and some butter, salt and pepper.  They're usually pretty thin so 4 min on the first side and 5 min on the other should give you a nice medium cook.  Let it site 5 min and slice against the grain for tender, flavorful meat.  

    There are lots of marinade recipes and some that you buy in a bottle or packets you mix with oil and other things but this one is our favorite. Beer Marinade1/4 cup soy sauce2 tablespoons olive oil3 large garlic cloves, minced2 teaspoons Dijon mustard2 teaspoons chopped fresh rosemary2 teaspoons Worcestershire sauce2 teaspoons coarsely ground black pepper1/2 cup dark lager beer 2 1/2 pounds trimmed hanger steaks (about 3 pieces)Combine the first 7 ingredients and then gently whisk in the beer.  Place the steak in a large shallow plastic container and pour the marinade over it.  Put the lid on the container and put it in the fridge for at least a couple of hours - turn the steak inside the container a couple of times to be sure it's all covered well.

    Probably marinate it in a marinade of your choice, then grill it on a 'flat top'.

  • Sous vide is awesome. 1 hour at 128 degrees for the rare side of medium-rare.

    Then a quick sear in a screaming hot pan. The picture is a hanger steak I cooked last week.

    I use Mesquite rub.  Fry in a hot cast iron pan on stove-top for 2 - 3 minutes per side, then roast in a 450 degree oven for 6 - 8 minutes.

  • Season with olive oil, sea salt and fresh black pepper. Grill on high heat for 3-4 minutes a side.
