In a cup of cold water, gradually add one teaspoon of gelatin powder stirring constantly to prevent sticking and lumping. Gradually add that to your curry.

Instead of using gelatin-which may or may not be made from animals products-try using arrowroot starch. It will give a glossiness to vegetables and also thicken up a sauce as well.

I don't understand. Many people on the subcontinent adhere to a religious faith that requires vegetarianism. Most gelatin is processed from animals. How can this be a thing?
