Milk in most cookie recipes can be swapped with water with no problem.

Some egg subs that can be used are

1 Tb Ground Flax seed mixed with 3 Tb water and allow to sit for a few minutes to thicken.  This is for each egg.

1/4 Cup silken tofu for each egg.

1/4 Cup mashed banana for each egg.

And if you are going to be making a lot of egg free items there are egg free substitutes you can buy that are egg free, dairy free, gluten free.  And if you are going to be using it a lot it might be worth trying.

I have seen some cookie recipes online that only have 3 or 4 ingredients.

I'd look on Google for recipes.
