Why do all cooking genres use the same ingredients?

I mean take garlic... or pepper? Why do Asian cultures use peanuts.. which are from South America.... what about avocado... a staple of both sushi and Mexican... what's the deal?

In these modern times, all cooking / cuisine involves many ingredients [Cosmopolitan or Fusion cooking] is the 'norm'.

People took this question as condescending for some reason, I guess it's obvious that the fusion of culinary cultures was inevitable.

The deal is that you are over generalizing it and assumed that just because the ethnic cuisine you have in your area must represent the actual cuisines for all ethnicity.

First, not all Asian cultures use peanuts and even those that do, do not use it for all their dishes. Japan, South Korea, and Mongolia are just 3 of the 48 countries that makes up Asia and I do not every recall having a traditional dish from any of them that had peanuts.

Second, avocadoes are not staples of sushi. There is not just 1 kind of sushi, but at least 4 types. The ones available outside of Japan is the nigiri or Edo-mae sushi and even then the use of avocadoes is a foreign thing and not traditional in Japan. It's like pineapples and ham on pizzas - you won't find that anywhere in Italy.

Third, not all Mexican cuisines use avocadoes. Mexico has at least 7 different regional cuisines and not everyone or all dishes use avocadoes.

Generally the typical ingredients for a particular cuisine are used because that is what grows in that country/region.

French cooking has a lot of butter and cream because the pastures are well-suited to dairy cattle.

Avocados require a hot climate (no frost) to grow, so you won't find avocados in traditional Swedish dishes .. .but in hot climates.

Those ingredients may originated in one region but have clearly traveled, over the centuries, to other parts of the world. Peppers, potatoes and tomatoes all originated in South America.....look how far THEY have traveled. good food/ingredients is good food/ingredients around the world.
