It's fresher and better prepared in Japan. Also more varied.

Compared to the US, the sushi in Japan has more variety and even though the names may be the same of certain dishes, they are in fact not the same. This is because many of the names we use for fish are common names and not the actual names of the species of fish. For example, there is no one specific fish that is a sea bass. A sea bass in the US is a different fish from what the Japanese call sea bass.

There is also the quality difference. You can go to a small family run sushi-ya (sushi eatery) in Japan and the quality is usually comparable to the most expensive sushi restaurants in the US. And the really expensive ones in Japan are just incredible - I have not found a single sushi place in the US that can match the high-end sushi restaurants in Japan.

How does SUSHI in Japan compare with SUSHI  in the USA  ?  for some humor   LOL as a realtor  phrase  LOCATION  LOCATION , LOCATION

SUSHI  ( oxford dictionary ) is a Japanese dish consisting of balls or rolls of VINEGAR - flavored cooked cold RICE served with a garnish of RAW FISH , VEGETABLES ,  or EGG

in examination one could focus on and COMPARE

any one or each of ALL of  the 5 MAIN components of SUSHI

     VINEGAR

     RICE

     RAW FISH

     VEGETABLES

     or EGGS

that would be a large  undertaking  the primary DIFFERENCE is the USA is regulated by the  FDA

FOOD and DRUG administration  its GUIDELINES  REQUIRE  RAW FISH must FIRST be FROZEN at - 4 degrees F  for 7 days or at -31 degrees F for 15 hours before use

in COMPARISON  in JAPAN  there is no such regulation  the SUSHI " masters argue  freezing and defrosting  RUINS the   flavor of SUSHI  a CONNOISSEUR of SUSHI  could probably  identify a DIFFERENCE perhaps in flavors or texture of the fish Thank you for the question

I can imagine it's the best in Japan.

Only Japanese immigrants also make it best in America.
