bbq sauce, mustard, fried onions, giardineira, red sauce, multiple kinds of cheese, pickles, gravy, raspeberry jam/jelly, bread it and fry it

You've got a head start on a Cuban sandwich, one of my favorites! Cut open a Cuban loaf of bread and butter it. Add your sliced pork, an equal amount of ham, some Swiss cheese, mustard and a couple of pickles. I have never understood why it tastes as good as it does, but it's spectacular. The pickles should be sour and crunchy.

Wasabi or horseradish. Or cranberry jelly. I wouldn't do both on the same sandwich

Any of these: Barbecue sauce, a little sauerkraut or cole slaw, pork gravy, sauteed onions, swiss or cheddar cheese, even a fried egg.

Leftover stuffing / dressing, Apple sauce, Crumbled / crushed cracklin'.
One or two of these, or if your feeling indulgent all three!.
If you have some dried sage; this mixed with some mayo & a little salt is a good addition to a pork sandwich.
