Would any specific breeds of draft horses be able to be used as stock horses.?
Like driving cattle, cutting cattle, etc.

It's possible but not really recommended. If you have worked cattle with a good quarter horse, or even just paid attention at a rodeo, you will already know that some QH individuals seem to have built-in knowledge of cattle. You'll see the same sort of thing with well-trained Border Collies working sheep.
Also, working cattle requires an agility not usually found amongst the heavier breeds.
The only advantage that a draught horse might have is holding tension on a rope. They are superb at pulling heavy weights.
