What was Italian food like before they got the tomato?

    Probably still delicious, knowing the Italians.   Only the French chefs are better.

    Tomatoes have always been around.

    • Not in Europe. They are native to South America. It shocks me that so many people are ignorant of this - just like they think potatoes come from Ireland.

    Lots of olive oil.

    Lots of Italian dishes still rely on olive oil to the exclusion of tomatoes

    and those will give you a good idea of what it was like.

    Example: ever had spaghetti with butter, salt, pepper and Parmesan? Really good.

    I'd expect it would be nearly as good with olive oil instead of butter.
