Am I safe giving elderly people homemade lemon meringue pie????

I m just thinking of the egg whites. They are baked obviously in the oven for 15 minutes but I m worried about underneath the crispy outside. It is set but soft and I don t know if this is cooked enough for old people?

    old people often eat soft fried eggs too you know.

    We all aren't as paranoid as you youngsters are.

    If it's a correctly made pie, it should be safe. You can use a thermometer to check the lemon custard is 170F. Toasting in the oven is enough to cook meringue. You could alternately heat the egg whites and sugar over a double boiler to 160F, whisking to dissolve the sugar, then beat it to a meringue, then toast. That will definitely cook the eggs.

    They will be fine. Not sure why you would think egg whites would bother an old person.

    The meringue is browned / cooked in the oven, so it should be fine.

    If you're worried, you could use 'Italian' meringue which is made with hot sugar syrup that 'cooks' the meringue, before you brown it with a kitchen torch.

    There is little chance of getting sick from the whites. 

    Just use the freshest eggs you can, do not use any that are cracked. 

    If you want to be real sure and make an even better meringue make a Swiss Meringue.

    Elderly people should know enough what foods are safe for them to eat or not. I don't really think you have to worry much about it. I'm sure your making things for them will be greatly appreciated whether they eat it or not.
