A variety of materials: Most common for internal walls in modern houses are brick, concrete block, timber or metal stud and drywall (sheets of gypsum plaster faced with paper) or plywood. Older properties have timber studwork, chesnut or similar riven laths and lime plaster reinforced with horse hair. The choice is down to the performance required and the relative cost/availability of materials at the time of construction.

Sheetrock is dirt sandwiched between 2 sheets of paper. Brick is clay dirt that has been cooked in an oven. Concrete is dirt such as sand and gravel in a cement made of ground up burned dirt.

That depends on the wall.  Shift yourself to be a bit more specific and we can be a bit more educational.
