Why are chemists and biologists so much concerned with classifying and naming stuffs?
Physicists and Mathematicians just study stuffs and find the results.

Mathematics has naming of stuff too but the nature of the topic makes the definitions far more rigid and so it doesn't become an issue in its own right. For instance, it is very easy to define a prime, a quadratic, a polynomial, a derivative, a trig identity, a field, a manifold etc. And so you can just learn about them without much concern for the classification process.
In bio and chem the categories are somewhat less well defined at the boundaries but people still want categorical laws and rules because that is how we break down a subject into things we can know. So classification becomes an issue in itself because to some extent it is arbitrary, we are just trying to make it the most convenient for the most people.

English has about 10,000 words we use to describe the world around us.
Mathematicians have about the same 'words' we use.
As do Chemists.
The more precise, the better we are at communicating.

Since there are literally hundreds of millions of different molecules that we know of, perhaps being able to name and group them is important.
"Watch out physicists: There’s a new taxonomy in town. At the beginning of January 2016, APS unveiled the Physics Subject Headings (PhySH) classification system, which will replace the Physics and Astronomy Classification Scheme (PACS) previously used to organize APS journal articles into subject areas. The new system will serve as a tool for readers of the APS journals — allowing for easier navigation through papers and topics of interest — and will help APS assign papers to editors."

You need language to share your findings. How would anyone know if you're talking about the same kind of weird spider if you couldn't agree on a name for the kind of weird spider?
