What type of stitch is this?

    It's a coverlock stitch made on a commercial factory type machine. No home machine does this stitch. It's only done by industrial coverlock machines. The ISO classification is 605 lapped seam coverlock and is used in athletic wear because of its strength and elasticity.

    It looks like a blanket stitch, it gives a flat seam.

    It appears to be a 4-thread overlock stitch, made by a serger machine.
