My EMT course is a 1500 page textbook, no one can memorize every page, so what do I really need to know for the NREMT/EMT life in the field?

    You need to know the course objectives.

    To pass the NREMT, you have to have a good enough understand of that to process the right answer to the problem solving & clinical judgement questions, which make up a lot of the test.

    No one is asking you to memorize the book.  Listen to what the instructors emphasize in class and concentrate on that.  Remember that CPR , airway maintenance,  stopping bleeding, protection against blood pathogens, backboarding  will take up a good chunk of the test  

    Life in the field is an ongoing education - if you look at that way,  you'll be fine .  Continue to train and take courses.
