If you consider the mainland only it is Spain, which has the most southern point in mainland Europe at Punta de Tarifa (Spain) at 36° 00′ 15″ N. However, if you also include islands Greece is the most southerly country in Europe and it has Europe's most southerly point at Cape Trypiti on Gavdos Island (Greece) at 34° 48′ 02″ N.
Cyprus, which has close relations with the UK (Europe) and which has v European culture is often considered part of Asia. If not then it has a more southerly point at the UK's military base at Akrotiri (Cyprus) at 34° 35 ′N.

Depends if you define being part of Europe strictly geographically, or politically. The literal geographic answer (the single European country which is furthest south) I think would be Cyprus.
But technically you have parts of European countries in other continents. Bonaire in the Caribbean is a municipality of the Netherlands. And of course the Falkland Islands at the southern tip of South America, which is a British Overseas Territory, and entirely British culturally.
