Virtual Desktops: Is there a point in using virtual desktops when you have 3 monitors?

Depends on what you are trying to do.

A virtual machine can run inside a real hardware computer, at the same time that the normal operating system is running and doing things.

The virtual machine can run some other operating system that then could run some program that is not compatible with the operating system of the real machine.

These two actions (the real machine running, the virtual machine running) could be displayed at the same time on different monitors.

That is all that can be discussed from so little information in your question.
