If going without showers for a while causes fungal infections, why do dermatologists recommend going without showering so frequently?

Your premise is false.  That may be why the dermatologist recommendation doesn't seem to make sense.  Going without showers does not cause fungal infections.

I'm thinking showers, water and moist is good for fungal infections. The dryer, the better in the fight against fungal infections.

skipping a shower is not the same as going a couple of weeks scuzzing up and growing your pubes through your shorts ...
