why does a defensive touchdown count against the opposing defense they weren't even on the field when it happened?

    It counts against  whole team stats not the defense only

    Football is a team game. The offense, defense, and special teams can all score.

    Football is a team sport.  Every play every player has the potential to play offense and defense  Just because you started on offense as a RB, for example, doesn't mean you don't have defensive duties on a turn over.

    It only counts if the offense fumbles and then the defense picks it up but then the guy returning it also fumbles and then the offense (now defense) picks it up and scores.

    It doesn't count against the defense in many leagues.
