if you have a few inches of clearance at the door side tracks,it ought to be an easy install,,hinges, 2 each side,sunk with wood or metal screw to go through aluminum

On the doors? No. But build a frame around the door and mount (custom) plantation shutters in the frame? Sure. My mom had them at her house.

Yes you can. Picture it like if it was a large closet opening. Depending on the space you have it would be bifold plantation shutters or full width sliders. They would need to be custom ordered and will be expensive.
