Why are white people called white when their skin tone is not white?

Look at blank piece of paper. That is white. White people are not white.

I've seen some white people that are white like snow. So, that's actually not true.

That's not new, these two colors are the extremes of luminosity and are used in a lot of instances to emphasize a strong dark/light contrast between two things.

White chocolate isn't actually white, it's light brown/yellow. Black chocolate isn't actually black, it's dark brown.

White wine isn't actually white, it's yellow, a light color contrasting with the dark red of regular wine.

The white pieces in chess are often not actually white but ivory. But it's called white because it contrasts with the black pieces (that are sometimes not actually black).

Black pepper isn't actually black and white pepper isn't actually white.

Same thing with hair or skin colour.

That's how it is. We call black people black, even though their skin is brown or dark brown. It's just the way it is.

Ok then blacks shouldn't be called black, because they're not really black. They're brown. It's just a shallow name to refer to people of European descent.
