I made teryiki chicken last night and today when it went to referigerate it it basically turned into a paste. why is this?
i have no problem eating leftover teryiki chicken from restaurants, its always delicious and never pasty. why did my mines turn into a nasty paste over night. i had it stored in the refrigerator in a to go box.

If you cooked the chicken in with the sauce the bit of fat that rendered out will cause the sauce to firm up.
Also the collagen that baked out of the chicken will also cause any sauce to firm up.
As you reheat the sauce and chicken it will return to the normal viscosity.
Because you are reheating it there will be some evaporation you might want to add just a little bit of water for added moisture.

oil hardens in the fridge...gotta heat it...but i suspect the real problem is cheap walmart chicken
