Structure. Gluten protein denatures when heated (cooking) to a certain point, making it "sticky" to other molecules. Think of bridges connecting island molecules. Bamboo fiber is long and stringy and help provide that "bridge," although the bridging mechanism is different (weaker) with gluten. Bamboo fiber is also fast to grow and doesn't require significant fertilizers/pesticides, making it environmentally preferred over many vegetable and fruit fibers.
