To cater for all their customer base, it makes sense.

More and more people want a vegan option. As America grows more diverse, we have more people with strict dietary restrictions. As well as those who avoid meat, some avoid pork, some avoid beef, some avoid dairy, some eat kosher, and so on. A vegan will always be a safe choice for people on such diets since it is free of both meat and dairy.

Even if there's nothing vegan on the menu, a better restaurant will almost always fix you something like veggies, potato, and mushrooms.

Because they cater to paying customers. You do realize a restaurant is a for-profit business, right?

Because having psychopathic clientele like you that uses your steak knife to threaten to kill their staff & other customers with, would have forced them to void their indemnity & public liability insurance if they didn't embrace their vegan customers.

I like broccoli and asparagus. Yum. I'm vegetarian though not vegan.
