Will practicing typing likely improve my eye-hand coordination?

No. That’s an exercise in “muscle memory”: instinctively knowing where each key is.

Table-tennis, juggling, basketball and similar activities where the target object constantly varies in position will all develop your hand to eye coordination.

I don't think so as typing often becomes touch-typing and that's only useful for the keyboard.

You'd do better to learn to play a modern video game as it will provide a wider field of interaction.
