    Why are "ANCHOVIES" so salty ?

    that is CURED anchovies because they are preserved in BRINE

    FRESH anchovies are Not salty known in ITALY as " ALICI "

    Not all anchovy are salty, not all anchovy are preserved or cured in salt.

    Anchovy can be cooked just like any other fish.

    Most of the ones we get though are preserved and salt is one of the easiest methods of preservation particularly for something the size of an anchovy

    When the nets were brought up. Into the boats. The anchovies were dumped in the fish hold then salt spread across them to preserve them. This is back before refrigeration. Wooden ships with tall sails. So it is tradition. Also all other fish were treated same brought aboard. But thicker fish were slit then salted.

    If you were suddenly fished up out of the ocean and dragged away from your home against your will, I'm pretty sure you'd' be a bit ticked off as well.
