the preoverbial elephant has an unlimited memory; an elephant never forgets, so presumably neither do "we", the people referred to by "we all have an elephant's memory". I would need a slightly larger context to say more, but the reference is almost certainly to the "elephants never forget" idea.

Collectively we hold a huge amount of memory.
That's the nice thing about elephants, they work for peanuts but remember you for the rest of your life.

People have long said that elephants have a good memory. I don't know what that's based on- maybe they remember people who took care of them. This quote just mean that people have a long memory, too- which can be a memory of wrongs done to us or a memory of good times.
