On the game Kingdom Come Deliverance what is the difference between food durability and freshness?
I assumed freshness was how long till it spoiled, but if that s the case then what is durability do on it?

The durability stat determines how quickly the item's freshness is lost, while the freshness value itself tells you the current status of the item's freshness. So the two terms are directly related.
An apple is 'durability 5' which means it will lose freshness much more slowly than most other foods. It takes five days to spoil, meaning (I think..) 10% freshness lost each day as it is considered spoiled at 50%.
Another way to look at it, you have two items at freshness 60% and want to know which would be best to consume first. If one is Durability 2 and one is Durability 4, the one with 2 will spoil much more quickly than the one with 4 so it might be an idea to eat that one first.

Food are consumable items that help Henry to restore his health, energy, and nourishment, and come in the form of drinks, common food, raw meat, cooked food, dried food, smoked food and potions (see below). To eat you must have some meals in your inventory that can be found under the Food tab. You can also eat from the various pots of stew found on open fires and in kitchens throughout the land.Henry must eat or drink regularly in order to stay alert. Consuming too much, however, can make you unable to eat for a certain amount of time, and you will be heavy-handed and clumsy until you digest everything. You also must pay attention to what you eat: food after a certain amount of time will rot and eating it can cause you to suffer food poisoning.
