If you use MS Word and have the free Adobe Acrobat Reader installed, it is super simple to make a .pdf file.
Copy and paste your text into Word (in case you don't write in Word).
Then select "print" and from the available printer choose "print to pdf". (The wording might vary depending on your version.)
This will "print" the text into a .pdf file - i.e. it won't print it but make a .pdf file that looks like your Word file.

Write in Word and convert a copy at the end when you have finished.

looking for one that has features you want is something i leave to you but i have found a top 5 list.
Since i do not have first hand experience with any PDF writers (outside MS office 97) i can not tell you if those are just right for you..
But if you JUST want to write directly into PDF it might not matter.
