My Uber app keeps saying I need to update my payment, but when I do Uber app says payment is expired. It is NOT expired...?

I would uninstall the app and then reinstall it so you can re-input your payment options. See if that corrects it. Sounds like some sort of software glitch to me.
If that doesn't fix it, you need to contact Uber support. Here is a link to get started on that
