I am learning English, so we don't use "noun + noun" when we say about people, do we?

1 We don't use "noun + noun" when we say about people, do we? We don't say : Doctor clothes, teacher chalk, man watch, nurse uniform, student uniform ... 2 But we can use "noun + noun" when we say about animal, don't we?
